Yes Gary, Heros Pizza is a franchise so it needs to produce according to the diktat of their franchisor. So it is more market- driven than quality driven. Tino id the only owner of Amico Cafe'. I have seen the dough they make at Heros'...it is not Italian style. Tino imports 2 types of flour from Italy to make it according to an Italian quality standard. He also has a special oven (hybrid: wood/gas) that will keep the temperature consisten throughtout the cooking. That is wahy you would not have burned crust and row middle of the pizza. Cheers,
