Allergy Friendly Chocolate Cake Recipe

FREE FROM egg, dairy, nuts

250g Self Raising Flour
4 tablespoons cocoa
1 teaspoon bicarb soda
125g sugar
2 tablespoons golden syrup
1 and a quarter cups of hot water
90g dairy free spread/margarine
1 teaspoon of vanilla essence

Sift flour, bicarb soda and cocoa into a bowl, add sugar and mix.

In a separate bowl, dissolve syrup in the hot water and add the melted margarine and vanilla essence.

Mix all the ingredients together. Do not beat, gently fold together.

Bake in a lined baking tin for approx 25 mins (until a skewer comes out clean) at 160 - 180 degrees.

Icing - icing sugar, cocoa powder, a teaspoon of dairy free spread/margarine and a teaspoon of hot water.

I also like to make cupcakes using the same mixture. They freeze well and can be quickly taken out when required or you fancy a chocolate fix!
