Spanish Mushroom - Potato Soup With Pimenton
One of Spain’s most interesting dishes, with a warm and earthy flavor.
Olive oil, thinly sliced onion, dried porcini mushrooms, chopped russett (personally, I would leave the skin on), water, Spanish smoked paprika (I would simply use regular paprika), salt and sour cream.
Minestrone
A staple food in Italy. Go ahead and improvise. For example, the recipe calls for Great Northern beans. I changed Great Northern to black beans.
Olive oil, chopped onion, black beans, can of crushed tomatoes, water, celery ribs with leaves, diced potato, diced carrots, fresh spinach, salt and Parmesan cheese.
Potato, Broccoli And Cheese Soup
Tastes French-like, all creamy and delicious!
Butter, chopped onion, chopped potato, water, chopped broccoli, cheddar cheese, salt and sour cream.
Potato, Cheese And Asparagus Soup
The author says to put the potatoes and onion in first without the water, but if you are in a hurry, use all together.
Vegetable oil or butter, chopped onion, chopped garlic, chopped russets, water, dash of nutmeg, salt, asparagus spears cut into 1/2 inch pieces with rough ends removed and cheddar cheese.
Opinion
I like all of the recipes that I have highlighted, but my favorite is Potato, Broccoli And Cheese Soup. I do like the Potato, Cheese And Asparagus Soup recipe but asparagus is so hard to find. I am going to browse Dollar General’s produce section more often.
