5-Ingredient Chicken & Mushroom Fettuccine Recipe

Are you looking for an easy weeknight meal, that doesn't take long to make? This recipe fits the bill - it has just 5 ingredients and creates a tasty meal for the whole family. If you love creamy pasta dishes and mushrooms in particular, then this recipe will be a popular addition to your meal plan. Of course, you can add any extra ingredients that you like to jazz it up, such as bacon or parsley, however, this basic recipe is also flavoursome on its own.

Ingredients: (Serves 4)

**500g chicken thighs, diced - skin and fat removed
1 leek, sliced thinly (white part only)
350g mushrooms, sliced and diced roughly
420g can of Campell's Condensed Cream of Mushroom Soup
1/2 cup of lite sour cream**

* Add any extras that you like such as cooked bacon, or top it with fresh parsley. Serve over fettuccine, spaghetti or penne pasta.





What To Do:

Step 1: Heat 1 tablespoon olive oil in a large pot and cook chicken thighs for 5 minutes, until almost browned.

Step 2: Add the mushrooms and leek and stir for a few minutes, until the mushrooms soften and the leek is cooked. The water will come out of the mushrooms, which will become part of the sauce.

Step 3: Stir in the mushroom soup and bring to the boil. Put on the lid. Gently simmer for 15 minutes, stirring frequently. Take off the lid and simmer for another 10 minutes until the sauce is thickened.

Step 4: Meanwhile boil the fettuccine or spaghetti to packet instructions. Drain.

Step 5: Remove the creamy chicken mixture from the heat and stir through the sour cream. Add cracked pepper to taste. Serve over fettuccine.
