I love 4 ingredient recipes, don't you? In full transparency, the basic recipe for these coconut balls is not mine - it is actually printed on the label of the
"Pandaroo Sweet Condensed Coconut Milk" - however I have changed it to be both gluten free and dairy free for several of my workmates with food intolerances. I will be taking them to my work Christmas party so that most people there will be able to enjoy them. I must admit, I wasn't sure how they would turn out - but they are
yum! The other people there won't even be able to tell the difference!
Ingredients:
205g packet of "Woolworths Free From Gluten" Arrowroot biscuits, crushed
320g Condensed Coconut Milk
1/3 cup cacao
1/2 cup desiccated coconut (plus extra for rolling)
What To Do:
Step 1/ Place the biscuits in a zip-lock bag and bash with a wooden spoon to make a crumb. Pour into a large bowl.
Step 2/ Add the coconut condensed milk, cacao and desiccated coconut. Stir to combine thoroughly.
Step 3/ Take a small amount of the mixture and roll into a ball. Roll in coconut and put on a plate. Repeat.
Step 4/ Place the plate of balls in the fridge for 2 hours to harden. Roll each ball between your hands to form perfect round balls. Serve and enjoy.
