4 Ingredient Bean Salad Recipe

It can be difficult to get a quick fix of protein and iron when you are on the run. I am a terrible cook so I love simple recipes and this one is super simple. It doesn't need heating; it's a throw-together recipe and stays in the fridge.

All you need is:
Balsamic vinegar
Four bean Mix
100g Danish feta cheese
A quarter a red onion diced


Rinse the four bean mix with warm water lightly.
Put the beans in a bowl.
Mix the diced red onion in with the beans.
Crumble the feta on top and mix through.
Cover with balsamic vinegar.
Keep refrigerated.

You can elaborate with other ingredients. Baby Spinach can be added. It's a great one to take along to a barbecue and refreshing and cool for the summer months.
