1Ton Noodle at Chatswood Interchange's The District is the first Hong Kong style wonton noodle restaurant in Sydney. Owner Bernard Ng is a cheerful man who is incredibly proud of his food and the quality of ingredients that he uses. He reveals that the thin egg noodles are made in-house with a machine imported from Japan.

At 1Ton you can order wontons and other proteins on their own, in a soup, with noodle soup or with dry noodles. We have the prawn wontons as is (8 pieces for $13.80), and they're perfectly big and juicy.

The classic pork & prawn wonton noodle soup ($11.80) is served in a clean broth. I'm a fan of the flavourful wontons, and the thin egg noodles are excellent. The bouncy noodles are cooked perfectly al dente. If you like spicy food, make sure you add a bit of their housemade chilli to the soup. It's very hot, but very delicious.

The vegetarian noodles are my favourite. Braised shiitake mushrooms and fried tofu can be ordered as a dish on its own or with dry noodles. We get the latter for $14.80. The mushrooms are bursting with umami flavour, and the fried tofu is doused in a fantastic sauce.

The beef brisket noodles ($14.80) are also a crowd pleaser. Full of flavour, the noodles are served with beef tendon if you're feeling adventurous enough. Of course you can choose to pass on the tendon.

I love my green vegetables to accompany noodles, so ordering the seasonal vegetables is a must. The veggies are simply blanched and served with oyster sauce ($5.50).

The thinly sliced slow cooked pork belly with caramel soya egg ($7) is a satisfying side dish. I'm hooked on the gooey egg yolk right away - they're a great complement to the noodles.

Undoubtedly, the highlight of our meal is the crispy skin roast chicken ($9). The roast chicken is tender and loaded with flavour, then deep fried to crispy perfection. Five spice takes the chicken to another level.

As for beverages, the chrysanthemum tea is made in-house ($3) or you can also order Chinese tea for $1.
