Zucchini & Pumpkin Slice
Vegetarian Snack or Lunch.

This recipe only takes 10 minutes to prepare and costs $1.50 per person. Grated pumpkin will add a taste like never before with your zucchini slice. Normally you would have bacon but why not go vegetarian and try this zucchini slice with pumpkin instead. Low in calories and packed with flavour this slice will contribute to your daily protein intake.

This original recipe will not only have you wanting more but has the flavours of sweet and savoury all in one slice. The pumpkin flavour will sweeten up the zucchini without the extra calories.

Try this delicious new vegetarian recipe today.

Preparation time – 10 minutes (serves 4-5 people)

Ingredients

3 x medium zucchini's - washed and grated
1 cup of grated pumpkin
4 x free range eggs
¼ cup of plain flour
1 teaspoon of vegetable salt
¼ cup of grated tasty cheese

Method

1. Preheat oven to 180c degrees.

2. Grease a medium sized baking dish.

3. Squeeze excess moisture from grated zucchini and pumpkin.

4. Mix in a bowl zucchini, pumpkin, eggs, flour and vegetable salt.

5. Pour mixture into a greased baking dish and sprinkle grated cheese over the top.

6. Cook in the oven for 20 - 25 minutes or until cheese is golden.

Zucchini & Pumpkin Slice
Yum - wait until the top is golden brown before you remove it from the oven.

***Fantastic vegetarian snack or lunch with a side salad.

Looks highly edible. Great for lunch etc. I quite like a good fritatta. Thankyou. They are great too, if you vary the recipe a bit, for left overs. (ie vegetables you havent used during the week.)

Yet another mouth-watering vegetarian recipe, thanks again. Absolutely gorgeous, inexpensive and healthy. If you know of any others, I’ll happily read and experiment with them. Zucchini is amazing! Same with pumpkin.
