Enjoy this delicious Frittata with a fresh green salad.
Preparation time – 15 minutes (serves 4)
Ingredients
2 x Short cut bacon rashers
1 x Onion
1 x Zucchini
1 x Potato
4 x Large eggs
Cup grated cheese
Pinch of vegetable salt
Method
1. Cut the fat off of the bacon and discard into the rubbish bin. Dice the leftover bacon into small pieces.
2. Dice the onion into small pieces.
3. Grease a non-stick fry pan with butter or oil and place on the stove and heat to a medium temperature.
4. Add the diced bacon and onion to the fry pan. Fry these ingredients until just brown.
Fry the onion and bacon until just brown.
5. Peel the outside skin off of the potato and continue to peel the potato into thin slices with your potato peeler.
Grate the zucchini and thinly slice the potato with a potato peeler.
6. Grate one zucchini and add the potato and zucchini to the fry pan.
7. Stir with a wooden spoon and cook until just soft, approximately 5 minutes.
Fry the potato and zucchini until just soft.
8. Whisk the eggs in a bowl until just frothy on top.
Whisk the eggs in a bowl until just frothy on top.
9. Flatten the mixture in the frypan and ensure the mixture is evenly spread over the whole base of the fry pan.
Spread and flatten out the ingredients in the fry pan.
10. Evenly pour the egg mixture over the ingredients in the fry pan and cook until the egg mixture is just cooked on the bottom, approximately 5-10 minutes.
Spread the egg mixture evenly over the ingredients in the fry pan.
11. Turn the oven on to the grill and use the highest heat possible.
12. Spread the grated cheese over the top of the mixture in the fry pan and place the fry pan in the oven until the cheese is golden brown or melted just the way you like it.
PLEASE NOTE: When removing the fry pan from the oven, make sure you use an oven mitt because the handle will be hot.Make sure you use an oven mit to remove the fry pan as the handle will be hot.
13. Slice into quarters and serve with a fresh green salad for lunch or dinner.
