Want a healthy light meal? Well, with vegetable rice paper rolls, you cant go wrong. They are simple, non fattening, plus irresistibly tasty. They are also great for parties, lunch or even as a snack between meals.

Ingredients:
1 large carrot, grated
2 trimmed celery stalks, chopped finely
150g wombok, shredded
2 teaspoons fish sauce
2 teaspoons brown sugar
1 tablespoon lemon juice
24X17 cm square rice paper sheets
24 mint leaves
Method:
1. Combine carrot, celery, wombok, sauce, sugar and juice in medium bowl.
2. Place 1 sheet of rice paper in medium bowl of warm water until just softened; lift sheet carefully from water, place on tea-towel covered chopping board.
3. Place 1 level tablespoon of vegetable mixture across edge of sheet; top with mint leaf. Roll to enclose filling, folding in ends.
Repeat with remaining rice paper sheets, vegetable mixture and mint leaves.
4. Serve with sweet chilli sauce, if desired.
