Thai Cookery Class @ Mon's Thai Rarnaharn Restaurant

Each space was set with an apron, chopping board, and knife and along the stretch of table were silver bowls filled with various, colourful vegetables, herbs, spices and condiments. Mon the petite restaurant owner introduced herself and we gained an insight into her country, culture and her life.

We began with an overview of the different core spices, herbs and other key ingredients we would be using throughout today's class and as we touched, smelled and became familiar with the different items, Mon shared with us tips on growing, storing, preparing them and where to purchase some of the more exotic ingredients. Much to my delight I had learned a number of things within the first 10 minutes and I knew that I would take away from this cookery class an enhanced appreciation for Thai food.

We all watched as Mon demonstrated her skills with the knife and we got started with cutting, dicing, slicing and finely chopping the herbs and vegetables with Mon's ever watchful eye ensuring that we did it all correctly. The kaffir lime leaves were rolled up together like a smoke and sliced as finely as possible like angel's hair, the garlic cloves were smashed and the onion and galangal were sliced super thin. As the fresh aromas started to fill the air we were all feeling hungry.

Red Curry Paste forms the basis of a number of the dishes so before we could progress it had to be made from scratch using the mortar and pestle and a bit of effort to pulverise all the ingredients into a paste. This was really fun even if it was a bit time consuming - it is something you would do in advance and not just when you wanted to use it as it stores well in the fridge and this would save you from being in the kitchen for hours.

With all ingredients prepared we began the cooking and first we got to taste Chicken and Coconut Soup which was so delicious yet so simple to make that I actually went home and taught my 13 year old son how to cook it.

Next was the entree which I am sure everyone was waiting for - Thai Fish Cakes with dipping sauce. These were equally delicious but a bit more involved. I have also since made these at home but instead of using fish I replaced it with chicken mince. We then assisted Mon and her assistant to prepare Red Curry with Chicken, Beef and Basil Stir Fry and Warm Prawn Salad and once it was all ready we sat down with a glass of wine to enjoy our meal.

This was a great introduction to Thai Cooking and Mon presented it all very skilfully and with plenty of humour, and she was happy to impart secrets of the trade to us along the way. I left armed with a starter pack that I had purchased filled with all the staple ingredients and a knife which makes it really convenient to go home and get cooking straight away which helps to consolidate your learning and to practice the little tips that you have picked up over the course of the day.

I highly recommend this course and this restaurant if you are a lover of Thai food.
