This is a simple recipe which is great for when you have left over roast chicken or schnitzel from the night before. Of course it works whether you have the leftovers or not. You can always purchase the roast chicken at your local supermarket. This is not just a salad for you ladies, I assure you that the men will also enjoy this and not complain about it not being 'enough'.
This is similar to the chicken salad I make all the time. Delicious! The only difference is that I add red capsicum. As a meal, I serve the salad with herb bread & it definitely fills you up (in a good way). I buy a baguette stick, slice it diagonally into pieces, spread with butter and dry mixed herbs and then place it under the grill. Yummo!
