Sunday Night Meal

After a fun weekend of bike riding, hiking, market strolling and shopping, when Sunday night rolls around the last thing I feel like doing is cooking a family meal. Sure there's take out, but I had pizza on Friday and beer and nachos while watching movies on Saturday night. Unless I want to spend money on a new belt buckle, a fast, healthy meal that doesn't make too much mess or consume my evening of relaxing is the best option.

This recipe is a perfect and quick way to fill tummies and a sure way to result in big smiles.

Your Sunday night sorted


You will need to buy a Barbequed chicken from the deli at your local Woolworths or supermarket, 150 grams of ham also from the deli, a tin of 'Cream of Asparagus' soup, a jar of asparagus spears and grated Tasty cheese.

Don't let the word 'asparagus' wrinkle your nose. It tastes amazing, and this is coming from a girl who would never eat the green slimy vegetable.

Pull apart the barbequed chicken, using only the tender, white meat, and throw into a heated frypan with a splash of oil. Pour in soup, chop ham and a few asparagus spears, combine and sprinkle the cheese. Cook until the cheese is melted.

Done. A delicious creamy chicken meal that costs next to nothing and will rapidly become a family favourite. You can serve with rice but I prefer to boil pasta and throw into the mix - it tastes divine.

Even better, this meal tastes great the next day on toast.

I agree, the last thing I want to do on a Sunday night is slave over a hot stove for hours. This sounds like a good plan for a quick yummy Sunday night meal - thanks!
