Spinach Ricotta Cannelloni with Pine Nuts Recipe

Spinach Ricotta Cannelloni with pine nuts
Delicious vegetarian pasta recipe.

Preparation time 15 minutes (serves 2-3)

Ingredients

11 x San Remo cannelloni tubes
80grams Baby spinach leaves
4 Tablespoons of light ricotta cheese
1 x Egg
1 x Egg yoke
cup pine nuts
Tin of peeled and diced tomatoes
2 x Cloves garlic
Cup of grated cheese
Olive oil

Method

1. Preheat oven to 180c degrees.

2. Grease a meat loaf sized baking tray.

3. Place one teaspoon of olive oil in a fry pan and turn to a medium heat.

4. Place pine nuts in the fry pan and cook for 2 minutes or until slightly brown.

Fry the pine nuts until slightly brown.

5. Wash spinach and thinly slice into strips.

Slice the baby spinach leaves into strips.

6. Place spinach, pine nuts, ricotta, egg and egg yoke into a bowl.

7. Dice garlic into small pieces and add to the bowl.

Add the cannelloni filling to a bowl.

8. Mix the ingredients until just combined.

Mix the ingredients until just combined.

9. Place the mixture with your hands into the cannelloni tubes. Layer the filled cannelloni tubes on top of each other in the baking tray.

10. Wash your hands afterwards as this is a messy process.

11. Pour the tinned tomatoes evenly over the top of the cannelloni and then sprinkle the grated cheese over the top of the tinned tomatoes.

Pour tinned tomatoes over the top of the cannelloni tubes.

12. Cook in the oven for approximately 30-35 minutes. Test the cannelloni tubes by using a skewer to prick the pasta to see if it is soft.

13. Serve hot straight from the oven.

***Tasty enough to eat on it's own for lunch or dinner, however lovely with a fresh garden salad.
