Simple Tuna and Mushroom Pasta Dish Recipe

A simple dish that requires simple ingredients, this is the perfect meal for those times you either cannot be bothered cooking or are in a rush.



Ingredients: Serves 4
400g pasta (your choice)
1 onion
8 mushrooms
1/2 capsicum
2 carrots (grated)
250g can Tuna (preferably in olive oil)
1/4 cup of oil
chilli powder
1 lemon (juice)
tomato paste
1/4 cup of water
cream (optional)

Instructions:

1. Heat oil and onion in a pan. Then add mushrooms and simmer for a minute.

2. Meanwhile, cook pasta in a separate pot of water. Add salt.

3. Once pasta is half cooked, add carrots, capsicum, tuna and a pinch of chilli powder to the sauce mixture. Stir and simmer for a minute.

4. Stir a tablespoon of tomato paste and water to the sauce mixture. Add paste and water for desired consistency.

5. Once pasta is cooked, add lemon juice to mixture.

6. Drain pasta and combine with sauce mixture. Serve.

Hint: If you want a thicker sauce, stir through some cream before serving.

I often make this dish when I need to whip up something quick. It is very tasty, especially with that hint of carrot shinning through. I hope you enjoy.
