Don't turn up to a BBQ with a boring salad again
So you've been asked to bring a salad to the BBQ, but you're sick of iceberg lettuce and cucumber? You are not alone.

Here are two easy recipes (just throw everything in) that will have your friends asking for more.

No boring salads here


Watermelon and Feta Salad

Everyone has a slab of watermelon in the fridge. Who would have thought to put it with feta? Delicious.

Simply throw the following in a salad bowl:

Slices of watermelon (thin wedges can be good)
Half a slab of feta cheese (again, thin long slices look impressive)
About 1/2 cup of mint leaves (sliced thinly)

Add any of the following, if they are in the larder:
A few sticks of celery (thinly sliced)
Sliced kalamata olives
Shallots (sliced)
Continental parsley leaves

Dressing:
1 T red wine vinegar (or balsamic, or white wine vinegar)
2 T olive oil
Squirt of lemon/lime juice
Salt and pepper (if you like)

A pleasing fusion of flavours

This salad is delectable. The mango adds a tasty sweetness which contrasts with the salted cashews, but raw ones work well too. The whole thing looks really amazing with the variety of colours.

A colourful, tasty delight


Ingredients:
Mignonette or 'fancy' lettuce, cut up
Lebanese cucumber, sliced
Half punnet of cherry/grape tomatoes, halved
Red/yellow capsicum, thinly sliced
1/2 red onion, thinly sliced and separated
A mango, (or peaches, or pawpaw) peeled and cut into small cubes
Just before serving, add a handful of salted (or raw) cashews and some sliced avocado

Dressing:
Use a bought vinaigrette, or simply make one with
1T balsamic vinegar
2T olive oil
1T wholegrain/dijon mustard
Squirt of lemon/lime juice
Pepper

Pour on and enjoy.
