Roasted Pumpkin with Garlic Recipe

My own personal favourite, roasted pumpkin and garlic are a match made in heaven. You will need pumpkin, garlic, olive oil and a few sprigs of rosemary. If you are not a huge fan of rosemary then that's fine, just leave it out.



Step 1)
Preheat your oven to 200 degrees celcius for fan forced and 170 degrees for a conventional oven. When ready, heat some olive oil in the pan for about 5 minutes.

Step 2) Cut up the pumpkin into fairly large wedges and leave the skin on as this helps keep it from going too mushy.

Step 3) Peel two small garlic cloves for each wedge.

Step 4) Add pumpkin, rosemary and garlic to the pan and return to the oven. Cook for approximately 30-45 minutes depending on the size of your wedges.

Step 5) Serve with your favourite dinner and enjoy.
