Rainbow Cupcakes Recipe

If you like rainbows and you like cupcakes, then you'll love this recipe for making rainbow cupcakes. The best bit is that it's super easy, in fact you don't even really need to follow this recipe, basically I'll give you two options. Option one is the super easy one that contains packet cupcake mix and some food colouring. Option two is a tasty, and still easy, cupcake recipe.

Yummy Rainbow Cupcakes


If you want to follow the easy option grab a packet of vanilla cupcake mix. Follow the instructions on the back of the packet until everything is combined (Don't go putting it into a cupcake tin just yet). Now go sit down, grab yourself a cup of tea, and wait for me to get these guys up to scratch.

Ingredients:
200g softened butter
1 3/4 cups caster sugar
2 tsp vanilla bean paste
4 eggs
1 3/4 cups self raising flour
1 cup milk

1. Preheat oven to 180ยบ
2. Cream the butter, sugar and vanilla bean paste with an electric beater.
3. Add one egg at a time, and beat until combined.
4. Add the flour and the milk to the mixture. Add them in alternate batches, and then stir with a wooden spoon. Easy, isn't it.

Okay, those of you using packet mix, finish your cup of tea and join us again because we're about to get colourful.

5. Split your cake mix into 6 individual bowls.
6. Colour the individual bowls of cake mix with red, yellow, blue, green, pink, and purple. I like to use Wilton gel food colours, but any will do the trick with these cupcakes.
7. Get two silicone cupcake pans (each making 12 cupcakes). I use silicone because it means the cupcakes will easily come out without having to use patty pans. Spray lightly with a vegetable oil spray.
8. Spoon in the mixture, one colour at a time. Make sure you are spreading the mixture evenly between all the cupcakes.
9. Put the cupcakes in the oven and bake for 15-20 minutes. Use a skewer to test when cupcakes are ready, when it comes out clean they're done.
10. Let cupcakes cool on a wire rack.

Now it is time to make the frosting, if you want to, just grab a tub of Betty Crocker Vanilla Frosting.

Frosting Ingredients:
250 g cream cheese
125g of room temp butter
450g of icing sugar
1 tsp vanilla bean paste

1. Mix ingredients together by hand.
2. Once combined, whip with an electric beater until fluffy.
3. Fill a piping bag with icing or frosting and choose a piping tip. I like the Wilton 1G tip. Pipe the icing onto your cupcakes once they have completely cooled. Top with sprinkles or other rainbow coloured candy.
