Quick Baked Chorizo and Feta Recipe

A quick side dish to throw into the mix when you're doing a tapas evening. This one will take you no time at all, so something to pop into the oven when you've nearly got everything ready.

Spanish Chorizo


Ingredients

1 chorizo sausage, thinly sliced
3 tbsp of olive oil
50g mixed olives
One packet of feta cheese (I like the smooth goats feta)


How?

1) Place the sliced chorizo into an oven proof dish together with the olive oil.
2) Bake in the oven approximately 20 minutes or until the chorizo is looking brown around the edges.
3) Whilst the chorizo is cooking, chop the feta cheese into cubes.
4) Remove the chorizo from the oven, mix in the olives. Add the feta cheese into the dish also. Some bits will melt, others will hold their form.

Serve whilst chorizo is still warm - the chorizo olive oil is great for dipping bread into.
