Potato Cakes with Parmesan Recipe

Cheese and potatoes, how can you possibly go wrong? This recipe is easy and tasty. It takes approximately 35 mins to prepare and serves four.
Ingredients:
750g of potatoes peeled and quartered
2 large eggs
100g of parmesan cheese, finely grated
1 tomato, diced
1/2 leek thinly sliced
30g plain flour
50g of feta cubed
Vegetable oil for frying
What to do:
1) Place the potatoes in a large saucepan of cold, salted water and bring to the boil. Simmer for 15 minutes or until potatoes are tender. Drain well and mash with a fork.
2) Place the leek in a frying pan with a small amount of oil over low heat. Cook until they are soft.
3) Add the eggs, parmesan, tomato, feta and leek to the potato and mix well.
4) Take a small handful of the mixture and roll it into a ball. Continue until none of the mixture is left.
5) Tip the flour onto a plate. Flatten each ball into a small cake. Coat both sides with flour.
6) Pour a small amount of oil into the frying pan. Fry the potato cakes until golden. They will need approximately 2 minutes on each side.
