Cake in a cup
Perfect for when you feel like some sweet comfort food and you just can't wait. Plus, this is great if you're on your own and don't want to make a whole big pudding.
Ingredients
4 dessert spoons of self-raising flour
2 dessert spoons sugar
2 dessert spoons of baking cocoa
1 egg
3 dessert spoons milk
3 dessert spoons olive oil
2 dessert spoons chocolate bits
Vanilla essence
1 large coffee mug
Method
1. Mix dry ingredients together.

2. Beat in the egg.
3. Add the combined milk and oil. I use a fork as it is easier to mix with. It's really important to combine everything well otherwise flour will sink to the bottom of the mug.
Mixing in the liquids
4. Add the chocolate bits and a few drops of essence.
5. Place in microwave oven and cook on high (1000 watt) for 3 minutes.
6. Remove and allow to set for a minute.
7. Using a knife, run between the mug and the cake. It should just pop out.
8. Eat while it's hot!
