Delicious Homemade Lemon Curd Recipe

If life gives you lemons.....make lemon curd!

Homemade lemon curd is the answer, people positively swoon for it in my experience.

Follow this wonderful recipe which is so simple (though you don't admit that to anyone), and wait for the compliments to flood in.

Firstly you will need to start collecting jars, ask around and you will soon have them piling up.

Hunt out some pretty fabric to use for decoration, and you will also need some waxed paper circles and elastic bands or ribbon.
Jam making packs are available from places like Hobbycraft or Lakeland.

Gather together the following ingredients :
8oz unsalted butter
1lb granulated sugar
6 eggs
Grated rind and juice of 6 unwaxed lemons

This will make you 4 average sized jars, so double up if you want more.

What you will need to do with them :

Melt the butter in a large heavy saucepan on a low heat.

Add the sugar and stir over a medium heat until the sugar has dissolved.

Beat the eggs and add to the pan stirring constantly.

Add the lemon zest and juice and keep stirring until the mixture thickens.

Place the clean jars in the oven on a low heat for 15 minutes to sterilise. (or use a sterilising fluid and follow instructions on pack)

Pour the lemon curd into the warm jars.

Allow to cool a little and place a waxed circle on the top of the curd and put the lids on.

Label the jars with the date as they must be used within 2 weeks.

Decorate as shown in the picture.

Make sure when you are giving away your lemon curd that you point out it must be kept in the fridge and used within 2 weeks. This is not the same as commercial curd which has a much longer shelf life.
