The 2017 Larder Series Cooking Classes feature Executive Chef, Scott Bridger.

Scott Bridger is the executive chef of the May Street Larder and Bib & Tucker, and in these cooking classes, Scott will teach you the secrets behind their favourite larder items.

You can take part in an exclusive small group workshop series, and learn tricks of the trade to create your own delicious home cooked meals that will be just like at any first class cafe or restaurant!

Each class will feature a different focus with Scott leading the group through the techniques behind some of his favourite recipes.

JAMS, MARMALADES and PRESERVES
If you make your own jams, relishes and preserves, you can put in exactly what you want, and not add chemicals. You can mix fruits and make exactly to you and your family's tastes and these will be healthier than bought ones as well!

They also make great gifts and most people love a homemade product. You will learn to master the art of making jams, relishes and marmalades!

This will not just include making them, but will also include bottling, sterilising jars and preserving seasonal goods, and you will get to take home a range of jarred goods along with the know-how to make the best preserves that your family is sure to love.

This is particularly helpful if you grow some of your own fruit, though you can also, of course, buy the ingredients if you do not.

KOMBUCHA and PROBIOTIC DRINKS
Kombucha is a variety of fermented, lightly effervescent sweetened black or green tea drinks which are now often used as functional beverages for their supposed health benefits.

It contains a colony of bacteria and yeast that are responsible for initiating the fermentation process once combined with sugar. After being fermented, kombucha becomes carbonated and contains the following:

  • Vinegar
  • B-vitamins
  • Enzymes
  • Probiotics
  • A high concentration of acid (acetic, gluconic and lactic)

  • These ingredients are supposedly good for you, and CAN have the following effects:

  • Improved Digestion
  • Weight Loss
  • Increased Energy
  • Cleansing and Detoxification
  • Immune Support
  • Reduced Joint Pain
  • Cancer Prevention

  • The sugar-tea solution is fermented by bacteria and yeast commonly known as a "SCOBY" (symbiotic colony of bacteria and yeast).

This is fast becoming one of the latest "super foods" and YOU can be the first of your friends to learn how to make it!

Everything you need to know to make your own kombucha and fermented drinks at home. Take them home and gain the skills and knowledge that you need to get started for gut healthy living.
