Winding your way along Melba Highway, you'll come across Immerse in
Dixon's Creek, 46km from Melbourne's CBD.
If you come to dine, Immerse's recently renovated
restaurant is comfortable, bright and spacious, with views overlooking the gardens. Open for
breakfast, lunch and
dinner on selected days, be sure to check opening hours and book a table before arriving.
The menu boasts locally grown and farmed produce, featuring mouth-watering flavour combinations and matching wines for
entrees and
mains. Some of the dishes currently featured on the seasonal menu include the black angus sirloin with mac 'n' cheese, field mushroom and caramelised onion, or the slow roasted pork belly.
The tantalising
dessert menu is hard to resist, with offerings such as coffee pannacotta with cinnamon donut or the chef-selected assietto tasting plate for two.

With a huge selection of body treatments, massage, facials, manicures and pedicures, the hardest part is choosing. There are lots of packages on offer as well, including the 'Chocolate Indulgence' (some of it's even edible) and special indulgences for the mum-to-be or bride.

And of course, with those 25-year old vineyards on site, you'd be remiss to depart without a visit to the
cellar door. Immerse produces six wines including NV Sparkling Chardonnay, Unwooded Chardonnay, Sauvignon Blanc, Pinot Noir, Cab/Merlot and Shiraz Viognier.
At the cellar door you can taste Immerse's wine, buy some to take home and also purchase from a selection of local Yarra Valley Produce.
After indulging in fine food, fine wine and pampering yourself at the spa, you can choose to settle into one of Immerse's 15 rooms for the night.
