To make about 12 scones you will need:
70 grams of butter, cubed
3 cups of self raising flour, sifted
Pinch of salt
1 cup of milk, however you may need a dash more
Directions:
Preheat your conventional oven to 220 degrees Celsius and 180 degrees for your fan forced oven.
Step 1)
Place flour and salt into a bowl and mix together. Add butter and rub through the flour until mixture resembles breadcrumbs.
Step 2)
Gradually add milk and mix with a knife to ensure it blends well.
At this stage you can use your hands (very clean hands of course) to blend the mixture together.
Step 3)
Turn out onto a floured board and knead lightly.
Step 4)
Roll out until approximately 2 centimetres in thickness. Cut with scone cutter or you can use the rim of a small glass to get the scone shape. Be very careful if you are using a glass and don't press down too hard.
Place scones on a floured oven tray and cook for approximately 15 minutes. Now the secret to fluffy soft scones is to place a clean, dry freshly washed tea-towel over the scones after you have removed them from the oven and placed them on a cooling rack. Leave this on until scones have cooled.
Step 5)
Enjoy with jam and cream.
