Guacamole is a traditional and popular Mexican dip that is quick and easy to make and goes very well with tortillas, corn chips or nachos.
There are many recipes available for
Guacamole, but this method below is one from
Jamie Oliver and works really well.
The main ingredient is 2 very ripe avocados. It's easy to choose a ripe avocado as it would turn dark green or nearly black and would be very mushy to touch. The first step is to carefully half the avocado and peel the skin. Then get the fruit into a blender using a spoon or just your fingers. Add some chili to this. I like adding red ones as it gives a lovely colour to the mix. Add a couple of limes or just already squeezed lime juice and a little olive oil.
Chop 2-3 spring onions and add them in . To all these ingredients add half a bunch of coriander and then whip them up in the blender.
Guacamole
After it gets a little smooth, add some salt and crushed garlic and grind again. Check the seasoning by tasting and add more salt/lime juice if required. To make it creamier you can also add some sour cream.
Some other versions of recipes also grind a tomato in and Tabasco sauce.
Serve it with a few pieces of chopped tomato, coriander and some lime on the top and make it look pretty.
