I love baking but with two kids, it's not a luxury I can particularly enjoy any more. I admit to being a follower of the Nigella Lawson school of cookery - express!



Each week at play group there are normally tasty morsels on offer, so with one hour to spare I decided to contribute this week. As I'm from overseas I haven't bought into the scales etc, so most measuring is done by trial and error. Today's delicacy was raspberry and white chocolate muffins.

1) Buy a packet of Coles Raspberry and White Chocolate muffin mix ( I know cheating but hold on, it gets better!)

2) Mix an egg with 3/4 cup of milk and 1/4 cup of butter and mix with the flour based part of the mixture.

3) Add a teaspoon of mixture into a pastry case.

4) Add a white chocolate melt into the middle.

5) Add a raspberry ( frozen or fresh) on top.

6) Add some of the raspberry sauce provided ( although I'm pretty sure raspberry jam would do the trick)

7) I deter away from the recipe somewhat and I mix the remaining jam/sauce in with the remaining mixture and scoop onto the top of the mixture/melt/raspberry in the cases

8) Cook for 10-15 minutes at 180 degrees

9) Take out, check it's cooked through (don't be fooled by the gooey melted choc in middle!)



10) Add another melt on top and put in oven for another minute so it just starts to melt.

It definitely livened up a simple packet mix and everyone was asking for the recipe, so it must have done the trick!
