Hummus Recipe
Ingredients
1 can chickpeas
100 ml lemon juice
100 ml olive oil
4 teaspoons crushed garlic (4 cloves)
Method
Drain and rinse the chickpeas under running water.
Put the chickpeas in a blender and add lemon juice. If you prefer a milder taste, halve the amount of lemon juice, using 50 ml instead of 100ml.
Pulse to break up the peas and then blend until a creamy consistency.
Add the olive oil. If you do not like the taste of olive oil or prefer to use something else, half can be replaced with canola or vegetable oil.
Let the mixture blend until you are happy with the consistency (less than 5 minutes usually).
Add the crushed garlic to the mixture and blend it again to combine.
If not serving immediately, put the mixture in the freezer for a half hour before storing in the fridge.
Serve cold, with nibblies, as a side-dish or spread on bread (or take a spoonful).
