Huh? Curries that can protect and defend?

Yes, you read this right!

Curries contribute to your body's defence against bacteria and protects you from diseases. The spices such as cumin, cardamom, tumeric and peppers in curries are known to get rid of bacteria in meats by 80%.

That aside, the many ingredients used to create the curry paste are useful for other things... including self-defence.

We tend to buy curries in a jar or from a packet. My friend swears by his A1 curry paste.



But curry pastes just don't have that pow that Indian curries have. Neither does it have that defensive or protective aspects that they have. Even if you splash and slather it onto any rabid attacker, it will not help. But, this is not the case when you use raw ingredients. More about that later.

Now, back to curries. The best curry will naturally come from India, the place of its origin. It was incredible - the fragrance from the spices, the lingering flavours in the mouth and the thickness of the curry. And I got to know some Indian folks, who told me the secrets behind making a great curry paste.



You need the following to make a great curry paste:

1) Curry powder (or masala): Otherwise, this is useful as a form of pepper spray for defence.

2) 1 onion: While this can be used to make someone cry, onions contain vitamin B and C and many other nutrients.

3) Ginger (around 5cm worth or 2 tbsp of ginger paste): Has many beneficial nutrients such as omega-3 fatty acids, folate and other minerals.

4) 1 whole clove of garlic (Or 3tbsp of garlic paste): Good for scaring vampires, antioxidants from garlic can help to increase overall body immunity.

Peel and slice up the onion, ginger and garlic.

If you have a mortar and pestle, pound the onion, garlic and ginger together.



Heat up 3 tbsp of cooking oil. And toss in the freshly pounded ingredients in. Give it a good stir and make sure that the ingredients do not char.

Keep stirring and put in 5 tbsp of curry powder. Add a splash of water. Mix the paste up.

Ta-dah! Freshly made curry paste that is tasty and healthier than what you can get from a pack.
