A great way to use up your roast chicken leftovers, this dish was invented by my dad. It was probably the only thing he cooked that we all loved. Sorry dad.

For something new and different that will have people coming back for seconds, make sure you try this different but delicious recipe today.

Ingredients:
4 cups cooked shredded or chopped chicken
1 cup of pineapple pieces
1 can of cream of chicken soup
1 cup of milk
1 chopped onion
2 chopped sticks of celery
1 finely chopped garlic clove
Cooked rice to serve

Directions:

1. Fry onion, celery and garlic in a large pot until transparent.

2. Stir in soup and then gradually stir in milk to ensure it blends evenly. Bring to the boil and then add pineapple and chicken.

3. Simmer for approximately 10 minutes, add salt and pepper to taste. Serve with steamed or boiled rice. Serves 4.
