Make a variety of Gourmet Cheeses
Cheese making is a unique art, one that requires patience, stamina and, of course, a great love for cheese. Camembert, Feta, Mozzarella, Ricotta, Cheddar – whatever your preferred flavour of cheese, you can learn the art of perfecting and making cheese in your own home. Brisbane runs a selection of cheese making courses in and around the City area.

Permaculture Realfood was created by Elisabeth Fekonia who is a qualified teacher in permaculture. I must confess I don't know a great deal about permaculture but I do know Elisabeth is very experienced in teaching and cheese making (amongst other things). Elisabeth runs a one day cheese making workshop in Windsor, Brisbane which includes specialities on dairy making. The next 'Cheese Making and all Things Dairy' workshop is on 24 September from 9.30am to 4pm meeting at the Peace Hall, 102 McDonald Rd, Windsor. Save $5 and pay only $80 for bookings before September 17th and $85 after this date. If you can't make it to Windsor, Permaculture Realfood offers another unique service. Elisabeth will come to you and your friends (for a group of 15 or more people) anywhere in South East Queensland and teach you a homemade cheese workshop. Another popular provider in Brisbane is Cheesemaking, which is not only the subject of this gourmet cheese making establishment but also the name. They recommend their cheese making courses "for people who want to learn the techniques and skills to make a wide range of handmade traditional and gourmet cheese and other dairy products."

Each cheese making class is entirely hands-on and over the course of 2 days you'll learn how to make approximately 10 types of cheeses. Their 2 day cheese making course is located at the Hospitality Training Association in Fortitude Valley (only a couple of kilometres from Brisbane's CBD). The next course in Brisbane with places still available is 29-30 October. Course times are Saturday 8am - 4pm and Sunday 8am - 3pm. The course will cost you $440 and includes all the materials and equipment you'll need. There's a 5% discount when you book for 2 or more people.

On completion of the course, you'll be proudly presented with a 'Master Cheesemaking Certificate'. If anyone doubts your cheese making abilities you'll be able to tell them where to look – up on the wall, of course, where you've hung your prized cheese making certificate.
