On the last week of our first semester at Leeds University, my friend and I decided to cook a full Christmas dinner for our friends.
These vegetables were made using a very simple method and turned out to be the perfect complement to our meal.
The recipe is ideal for anybody wanting to add a little variation to their Christmas meal, and is also a great method of encouraging younger members of the family to eat vegetables.
Ingredients
1kg carrots
1kg parsnips
Olive Oil
Thyme
You Will Need
An oven-proof dish
Method
First, pre-heat the oven to 220 degrees celsius, then peel and cut the parsnips and carrots into either batons or small chunks.
Next, coat the vegetables in oil and season generously with thyme.
Cook the vegetables until browned to your preference, turning them over and adding additional oil, if needed every so often.
When finished, the vegetables should be crisp on the outside and soft on the inside.
Serve alongside the rest of your Christmas feast and enjoy!
