UK chef Shane Horsley has established himself as the master of degustation. Don't miss this opportunity to experience his carefully planned 5-course degustation dinner at Altar Ego: Cradle of Hills 'Scarce Earth' Shiraz Experience @ Altar Bistro

A range of delicacies such as a twice cooked Époisses cheese soufflé, home dried vine ripened tomatoes, green bean salad and roast hazelnuts paired with winemaker Paul Smith's range of artisan crafted wines from cradle of hills vineyard and winery are just the start of this degustation delight.

In this first course, the pairing will be with cradle of hills 'Wild Child' chardonnay (2013) which derives its namesake from the wild yeast primary and secondary production resulting in a full bodied chablis styled, lightly oaked chardonnay with no fining required.

Work through the menu to the main course of roast loin of venison, parsnip and Gruyère gratin, shallot purée, creamed spinach and Jerez jus expertly paired with cradle of hills 'ROW 23 McLaren Vale Scarce Earth Shiraz' (various vintages continue to be highly rated in James Halliday's Australian Wine Companion).
