1/2 cup of almonds, crushed shaved 1 lemon 300g fresh ricotta caster sugar to dust 80g butter, melted 3 eggs 2 cups of plain flour
1/3 cup of brown sugar
1. Preheat oven to 180 degrees Celsius. Lightly grease a cake pan.
2. Food process the eggs, ricotta and brown sugar. Add the butter, lemon rind and process.
3. Transfer the mixture into a bowl. Add the plain flour and crushed almonds, then combine.
4. Spoon the cake mixture into the cake pan and bake for approximately 30-40 minutes, or until light and fluffy. Wait for five minutes to cool completely.
